That was a must for the cacio e pepe I made recently though to make sure the cheese incorporated

for sure, and i went above and beyond lol, i bought fresh tomatoes and peppers , roasted it all, then blended it with a bunch of herbs and spices

I've just been finding it a lot more rewarding making like one real high quality dish a week or so doing all the extra steps

And gonna use the bones and wing tips for homemade stock bc so many of these recipes recommends it instead of store bought

if u can be disciplined and keep ur bones, there's no better than home made stock. ive never done it outside school tho
