Hitman: Blood Money is probably my favorite game from this era. Best stealth game ever created. I've actually been playing it on PC quite a bit this week. One of my favorite games ever actually and I cannot freaking WAIT for Absolution this year.
Grand Theft Auto: San Andreas is a very close second. Also downloaded this on PC earlier this week but haven't had a chance to play it yet. Might also get Vice City just for the hell of it.
Bully is also one of my favorite games of all time. There's a 360 version with some extra missions, but it's still a PS2 era game originally.
God of War 1&2 are obvious picks as well. Like Hitman BM, their resolution on consoles was very good compared to other games of that generation because they were released late in those consoles' life cycles.
True Crime: New York City is another game I'm going to track down next week. Loved the scale and depiction of Manhattan street-by-street. Not a great story, but definitely fun and high in playability.
