@Stopspot any really, just stay away from Ubuntu and its Unity interface. I'm assuming this spare laptop isn't too powerful.
Check out Mageia: http://www.mageia.org/en/
Fedora 18 just came out too, and Mint 14 is nice too. Use XFCE or Cinnamon though, not Gnome, MATE, or KDE.

It's an emachines windows 7 laptop. Don't know the full specs on it. The thing wrong with it is a cracked screen so it is basically a glorified storage unit right now for things I don't want/need on my desktop computer or my HP Laptop.

Jesus it's confusing.

Okay.
User-friendly Arch.

I believe a GUI installation is provided.
Even still, you're going to have to adapt from Mint. Arch is quite advanced if you've not used it before, and having a desktop you don't know how to use is annoying.

Same as one of my old laptops.
Any LXDE distro will work well for you, Mageia, Lubuntu. You'll run Mint XFCE comfortably too.

Arch can be confusing but once you got it, you got it. With a strong enough signal it shouldn't take more than 30 min.. now gentoo on the other hand....
