its all a matter of opinion as you said, but the majority of the world and experts alike would put SOTN , Super Metroid in the greatest Metroidvanias of all time. sure ppl can disagree but at some point, there's a reason why people rate them higher than all others

I suppose if I had to describe it, Skyrim is a perfect example of all style and little substance, all sizzle and no steak. The main questline is baffling, there's not really any great side-quests worth playing, and if you dissected some of the joinable factions, you'd realize their questlines are also fucking hilariously stupid and nonsensical. But Skyrim has one of the most beautiful environments to just wander around in, there's lore everywhere you go, and so much to actually do when you add mods to the game lol
