Unless I'm really in to a show, anything more than like 2-3 seasons feels like a huge commitment. I'm fine once a show hooks me, though.

Well with it being a long show in your view, it just means if you get into it, you will have plenty to watch and won't be out of options again.

I don't mind shows that have a very specific story they want to tell and stick to it. like basically Vince Gilligan(i think that's his name) on Breaking Bad. He knew from the start what was gonna happen and how many seasons it would take.

none of this, "well here's the premise and we can see what goes from there"

idk about mandalorian cuz I haven't seen it but like the marvel series' so far are just one off seasons and they know what they are telling for that season, it's not jumping into a writer's room and saying, "ok what shall we do for next weeks episode?"
