When I go to the edit sig function there are no options to add a pic and the signature permissions says Can Upload Images for Signature NO. So yeah I can't use a pic in my sig which would've been that awesome pic of January Jones on the cover of GQ.

That's odd because your permissions look normal to me (unless I've missed something). Post a pic and I'll add it onto your sig for you.
