Strategy...they're trying to pull the 20's age group back into their product because they know we were the ones the product was originally aimed at. It'll also interest the current generation of kids in their back catalog of movies.
Also an instant trilogy would have seemed rushed and desperate. There's more nostalgia and buzz (no pun intented) this way.
