SMackDown vs Raw 06 and Here Comes the Pain are my two favorites but Shut Your Mouth and SVR 07 are great choices too

I personally think SVR 06 is slept on, not just for GM mode either. It was just so much fun, great story, great gameplay, lots of replayability with challenges and collectibles
