If Brock really wanted to screw the WWE, he'd just stay at home and let them figure out a new main event for WM 31 at the last second. If he's sick of them, he'll drop the title and be done with them forever. Why burn a bridge when there's a chance going back to UFC might not work out and he's back to looking for a multi-million dollar, part time job in 2 years?

Brock is only 37, he has atleast another 10 years to continue in pro-wrestling, burning a bridge would be foolish and not smart, and that's ONE thing Brock isn't.
