Lots... and lots... of Monster Hunter World. I'm a series vet, cut my teeth on Freedom Unite on PSP and have been with it ever since except for the 3DS releases. World is such a good game, some minor grievances like wishing there was a bigger variety of monsters than just wyverns, but MH games have free DLC so I'm sure there will be more added.

I originally thought Aloy was traveling the "world" hunting & killing mechanical
beasts, keeping their heads as trophies while using their "parts" to build better
weapons & body armor for herself...perhaps even eventually replacing parts of
her own body with cybernetics.
After I did some research I found out that wasn't the case...but apparently that
game I'd most like to play is the Monster Hunter series.

completely fucked that up so I'll never really know.
Can you wear Monster skin/scales/bones as armor?
Now that does sound like fun...Yup.
You can craft armor sets and weapons from basically every monster, and they're all thematically based on the monster you used the materials from.
