I don't think there's any saving WCW if you mean not being sold. The sale procedures in like October of 2000 IIRC.

The only downside about picking anyone else and playing as owner say Bischoff for example and saying he bought them is we know in real life is that you then wouldn't have the AOL talent or the Turner TV slot

Which makes sense. The letter of intent Bischoff signed to buy WCW was in January of 2001.

I can wrap a headcanon around Bischoff somehow getting all the AOL contracts and keeping the TV deals MAYBE

Bischoff's deal included the AOL contracts because the original deal AOL remained minority owners and WCW stayed on TNT.

I do think it would still be fun to play as someone else as the booker with Bischoff as owner tho

The fate of Thunder under Bischoff wasn't certain though. The deal only stated TNT couldn't cancel Nitro.
