I also have noticed while streaming on both that Twitch's lag is far less

on twitch when something happens on my tv and then by time i go to chat about it usually the audience has seen it but with youtube i'll be spoilin

with sims like that i usually just pull up the stream on my laptop and watch on that screen with everyone else so i'm not ahead.

I've seen that YT lag sometimes when B streams his tournaments for WWE

yeah it will happen sadly, on both platforms they prioritize their bandwidth for bigger people which makes sense.

You can highlight the streams on Twitch and they stay forever, you dont have to be a partner or affiliate for that
