I got inspired by Kif's randomized Wrestling cards thing to do a similar thing... but I'm not sure if I should start creating a fantasy database (real world Wrestlers as Avatars basically) or if I should go real world re-booking with that

Go with what you'd enjoy more imo, but fantasy sounds fun to me
