Speedruns are basically completing/doing something in a game as fast as possible. Some categories include Any Percent, which is to beat the game as fast as possible, or 100%, which is to complete everything in the game

As for Minecraft, there is a speedrun called Random Seed Glitchless, which is using a Random Minecraft World that you have to beat without using glitches
