Garlic is the worst

We made homemade marinara for the bar and meatballs and they insisted on fresh garlic cloves and it was a ton of it for those two things

Fresh ginger is also annoying to peel but after grating is easy

They have these frozen cubes of chopped ginger and garlic that i buy for my personal use.

I hate gutting peppers too, that's my other thing lol but it's alright a few seeds just add more flavor anyway

I usually just have a jar of jalapenos I use for toppings, other than that only if I'm trying to make some traditional Mexican food or something

It's nice where I live there's an Asian food mart, an Indian one, and a Mexican one so I can get basically any kind of foreign ingredient needed
