If making a movie was an option, I'd go Community. But I feel like it's movie or bust for that show because they ended the show how they should have and another season would just defeat the purpose.
So. With that in mind. That's a tough question. Many of the shows I've loved got a proper ending (Bojack Horseman, 30 Rock, Futurama, Fresh Prince). Some ended in a not so satisfying way like How I Met Your Mother but again... they wrapped everything up. There's really no way to make another season and not completely undo everything.
I guess my answer would be Unsupervised. It was an animated series on FX from the creators of It's Always Sunny and it was DAMN good. But it only had 1 season and got cancelled. Would 1 more season make a difference? Eh, not really, but at least it would mean 10-20 more episodes in existence.
