As much as I like Interstellar, Eternal Sunshine gets my vote, my favorite Charlie Kaufman produced film that I’ve seen.

Interstellar is perhaps my favorite movie ever. It's got everything. A brilliant story, great acting, and one of the best soundtracks a movie could ask for.

Even though I like Eternal Sunshine quite a bit, this isn't all that close for me.
