:dafuq:Jonathan said:This is a dish I created when I became vegetarian. It's an easy way to get vegetable nutrients in your body with out having to eat them plain! Only takes around 20 minutes to make too! Great for a meal, side dish, or appetizer.
Directions for Quick -N- Easy Salsa Rice
1
Cook Rice...
The directions are on the box. Takes about 8 - 10 minutes in boiling water.
2
While Rice Cooks...
Chop up the peppers, onion and tomato. You can make them small squares ( About the size of a dime) or thin strips. What ever your prefer.
3
Before Rice Is Done...
Add the frozen corn to the boiling water to thaw it out.
4
Saute Time...
Take a large pan, add to stove top. Put in olive oil and onions. Wait until the onions begin to brown, then add peppers in. *DO NOT ADD TOMATO* Cook until peppers are tender. (About 5 minutes)
5
Add Everything Together...
Once the rice is done, strain the corn and open the rice bag up. Put both the rice and the corn in the pot. Add the tomato and stir. Then add the other veggies. Sit again. Finally add the salsa. *USE YOUR JUDGMENT* I usually add around 6 table spoons. You may want more, or you may want less.
Tip
You can add in any other kind of veggie you like! Anything green, red or white seems to taste really good in this mix.
