We know that it does through centuries of empirical observations.

it's not like we just think these things up. They are tested over and over and over

Think about it... we only have 5 senses, right? We can only observe things and draw conclusions based upon those 5 senses. What if there are more things to be "sensed", so to speak, than humans are capable of? We wouldn't be able to know, and can't even begin to picture what they could be, because no one has them or has ever experienced them knowingly

And we have ways of observing things our senses cannot pick up

We cannot see infrared but we can build things to see it

The way we receive those observations is based upon the senses that we already have, though. I'm talking about the possibility of senses that we can't even build something to see or otherwise measure/observe.

I get what you're saying but none of that discounts the fact that there are things we can sense and test and that we can be 100% sure about

I mean, for the most part, yes, I agree with you. I just personally don't believe in anything ever being 100%, because there is no possible way that humans on this tiny little speck can understand the entire universe and how it works, and therefore, literally anything is a possibility, even if only to the slightest degree.

But we don't have to understand the entire universe to know the earth is not flat, all we have to understand is the Earth :)
