would bother creating a storyline between Cain Velasquez and Brock Lesnar having a beef with each other being that Velasquez ended Lesnar's Championship reign in his UFC days?

Imagine if a such story actually happened in the WWE. I can see Cain Velasquez obviously being in the front crowd for attendence while Brock Lesnar expresses jealousy towards Velasquez over his current UFC championship reign and wants a "rematch" against him(as UFC reference) and set it out at Wrestlemania.

What do you guys think?

Just because it was a popular rivalry or fight in the UFC doesn't mean that people will care to see it in pro wrestling. See Ken Shamrock vs Dan Severn from 1998 for example. If this were a one-time thing, then absolutely not. Many WWE fans (such as my proud self) don't watch UFC and thus wouldn't be aware of the history between these two men, nor would we care. If you're gonna bring in a celebrity from the legitimate fighting world to take on a WWE superstar in a fixed match, then have it be one of the other regular members of the roster.

Brock is already one dimensional, bringing another meat head who's even less entertaining would have me tuning out.
I can't find one reason why this would be even remotely worth it. Sometimes a fantasy is simply that.
I'd love for Sting and Undertaker to tear it down at Mania and for the crowd to eat it all up.... unfortunately that is all fantasy and a complete fabrication.

Sorry if I'm being a jerk, holding back the truth is relatively impossible for me.
