This recipe has to be the best I have found online. He walks you through the steps perfectly.
If you enjoy cooking channels and aren't subbed to Babish, do so. He is a food scientist.
That being said, I want to make this. I would make it right now if I could. The broth alone sounds amazing to sip.
I typed out everything for the stock and figured I'd post it here. Not sure if anyone is fond of cooking like I am but it is very easy to make stock.
Well, it is easy to prepare, not easy to wait for.
Chicken Stock
Ingredients:
- 6 x Celery
- 4 x Carrots
- 1 x Leek
- 1 x Large Parsnip
- 1 x Turnip
- 1 x Whole Clove Garlic
- 1 x Spanish Onion
- Chicken Wings
- Fresh Thyme
- Fresh Parsley
- Vegetable Oil
Prep:
- Half and quarter all the veg. That is about it.
Cooking:
- Brown half the chicken in large (stainless) pot with oil
- Add in the rest of the chicken & vegetables
- Add fresh thyme and parsley
- Add a sprinkle of pepper corns (NO SALT)
- Add water
- (Scoop out chicken scum with soup ladle)
- Simmer for 4 to 12 hours (8 sounds perfect)
- Drain through a cheese cloth
