Mashed potatoes are a pretty traditional option, as they go well with ham and/or turkey.

We're typically burnt out on turkey and stuff after Thanksgiving, so we typically do steak for Christmas dinner with baked potatoes.
I'm not a big fan of ham or turkey so at my friend group's annual friendsgiving we always get a prime rib :p
